Shout-Out To The BEST Cookies Ever!!

Lockdown was a strange experience. But one positive that came out for me personally, was that I fell in love with baking again. I planned on baking a range of different things to try and keep me occupied; however, after baking these cookies, they’re all I baked…!

These are the best cookies ever! Sadly, I’m not quite creative enough in the baking department to create my own recipe, so I followed this one by Jane from Jane’s Patisserie. If you’ve never heard of Jane, then I highly recommend that you check her out – her recipes are amazing!!

I do slightly change the recipe each time I make it as I tend to try different chocolate each time. For these, I used milk chocolate, white chocolate and Reese’s peanut butter chips – and they turned out just as delicious as always!! Previously I’ve used Cadbury chocolate, M&M’s, Mini Eggs, dark chocolate and so many other combinations.

This may only be a super short post, but I wanted to create it as I really struggle to believe in myself and feel proud when I do something well. Now, I know that these are only cookies, but each time I make them, and they taste just as good as I hope, I can’t help but feel happy with myself!

Because of lockdown, I’ve only been able to share these cookies with my boyfriend (not that he’s complaining). But later today I will be taking a trip to see the in-laws and will obviously share them around – so hopefully they like them too.

Even though I do sometimes get irritated if it doesn’t go right, I do find baking quite therapeutic – plus I have a massive sweet tooth so it’s great!

Finding something productive & relaxing to do to take my mind off the world has really helped me through this lockdown and I will definitely be carrying it on in the future.
